Sea-buckthorn-apple jam



Nyt on luomuhilloa kerrakseen! Mummolan reissulla tarttui mukaan omppupuun omenoita ja tyrnimarjoja pihan puskasta. Ei ollut ihan simppeli keräysoperaatio, mutta maksoi vaivan! Lisäsin joukkoon vielä isäpapan (tai no, mehiläisten) tekemää hunajaa.

Tyrni-omenahillo/-sose (määrät Kotilieden ohjeesta)

700 g omenoita
vettä
5 dl tyrnimarjoja
hunajaa

1. Kuori ja lohko omenat ja poista siemenkodat.
2. Keitä hetki pienessä määrässä vettä, kunnes ovat tarpeeksi pehmeitä soseutettaviksi.
3. Soseuta omput ja tyrnit, lisää halutessasi hunajaa.
4. Jos säilytät hilloa pakasteessa, voi hillon laittaa pakasterasioihin. Jos pidät hilloa jääkaapissa tai haluat vaikka antaa sitä lahjaksi, kannattaa se säilyvyyden takia säilöä kuumennettuihin lasipurkkeihin:

Lasipurkkien desifiointi

1. Laita pestyt purkit uuninpellille leivinpaperin päälle, laita pelti uuniin ja lämmitä uuni 100-asteiseksi. Näin purkit kuumenevat hiljalleen eivätkä poksahtele äkillisestä lämmönvaihtelusta. :)
2. Keitä korkit (tai tiivisteet, jos käytät purkkeja, joissa korkit on kiinni) vedessä. Jonkinlaiset grillipihdit tai muut tongit ovat kätevät nostaessa korkkeja kiehuvasta vedestä.
3. Purkkeja voi nostaa uunista sitä mukaa, kun purkitettavaa tulee. Purkit kannattaa nostaa esim. sanomalehden päälle eikä suoraan kylmälle tiskipöydälle jälleen poksahteluvaaran vuoksi.

Joissain ohjeissa kehotetaan liottamaan purkkeja vedessä vuorokauden ajan ennen kuumennusoperaatiota, mutta ilmeisesti moni jättää tämän vaiheen väliin. Omalta osaltani voin kertoa säilyvyyden tuloksista vasta keväällä, sillä tämä oli eka purkitettu satsini ikinä. Mikäli tavaraa siis riittää sinne asti, epäilen. ;)

This jam (or more like chutney) is made of grandmom’s apples and berries and honey made by my dad. Picking sea-buckthorn berries isn’t something I’d like to do every day (I totally get what the “thorn” in the name stands for :)), but it paid off!

Sea-buckthorn-apple jam (amounts from Kotiliesi)

700 g apples
water
5 dl sea-buckthorn berries
honey

1. Peal and cut the apples and remove the cores.
2. Cook for a short while in small amount of water until soft enough to be smashed.
3. Smash apples and berries, (add honey)
4. If you keep the jam in freezer, you can store it in plastic boxes. If you want to keep it in fridge or for example give as a present, store it in heated glass cans:

Desinfection of glass cans

1. Place washed cans on oven pan covered with baking paper. Place the pan in oven and heat it up to 100 C. This way the cans heat up little by little and won’t break due to sudden temperature change.
2. Boil the caps (or plastic seals, if you use cans that have caps attached to them) in water. Some kinds of tongs become useful when picking the caps up from the boiling water.
3. You can take the cans out of the oven one by one while proceeding with filling. The table should be covered in newspaper so the cans won’t face a cold landing spot and break.

Some guides say you should soak the cans in water for 24 hours before heating them up, but apparently this step is skippable.
